Recipe ~ Bacon Quiche

Hello, lovely friends!
Today, I'm sharing my favorite quiche recipe. This is the most decadent quiche that I have ever tasted! I only make it occasionally as there's nothing healthy about it whatsoever. I guess that's what makes it so amazing!


~ Bacon Quiche ~

1 single crust pie pastry (recipe below) or 1 sheet refrigerated pie pastry
1/4 cup sliced green onions
1 Tbs. butter
6 eggs
1 1/2 cups heavy whipping cream
1/4 cup unsweetened apple juice
1 lb. sliced bacon, cooked and crumbled
1/8 tsp. salt
1/8 tsp. pepper
2 cups (8 oz.) shredded Swiss cheese

(note: one piece equals 739 calories)

Line a 9-inch pie plate with pastry; trim and flute edges. Set aside. In a small skillet, saute green onions in butter  until tender.
Meanwhile, grease a baking sheet and bake the bacon for 10-12 minutes (or until crisp) at 400 degrees in the oven (no grease splatter mess all over your kitchen counter). Let cool and then crumble.
In a large bowl, whisk the eggs, cream, and juice. Stir in the bacon, salt, pepper, and green onions.
Pour into pastry; sprinkle with cheese (I actually just stir the cheese in with everything else) .
Bake at 350 degrees for 40-45 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.

~ Classic Pie Pastry ~

1 1/4 cup flour
1/2 tsp. salt
1/3 cup shortening
4 to 5 Tbs. cold water

In a small bowl, combine flour and salt; cut in the shortening until mixture is crumbly. Gradually add water, tossing with fork until a ball forms (I just throw everything into my Kitchen Aid Mixer). Cover and refrigerate for 30 minutes.

* I usually serve this with fresh fruit in the summer and muffins in the fall and winter months.

That looks delicious, Jamie! I used to love quiche before I had to go gluten free. Now I try and find decent crustless quiches. Another blogger friend did a post on muffin tin baking and I am going to try to do quiches that way.

Oh YUM! Bacon Quiche is one of my favorite foods. I think the apple juice would make it sooooo good with the bacon. Bookmarking this recipe to try it soon.

Yum is right! This sounds soooo good! Quiche is always such a nicely filling breakfast or lunch and you can get so creative with each recipe! Thanks for the great shower cleaner recipe, too, Jamie! I'll be making some of that this week! :)

My family loves quiche, but I don't make it very often. Yours looks really yummy! The addition of apple juice sounds intriguing. Can't wait to try this as a gluten-free version. :-)
