Fresh Cherry Cobbler

Hello dear friends!

I hope everyone had a wonderful 4th of July, enjoying our independence with parades, BBQs, fireworks, and good times with family and friends! We didn't do a lot on the day but I did make the following dessert ~
With a newborn in the house I'm not exactly blogging much, I know this post is a bit late but the recipe is so good I can't not share it with you all!

A friend brought me fresh cherries from a tree in her yard so I went in search of a dessert recipe for fresh cherries. I settled on the following recipe from AllRecipes.com. You can find the original recipe here.

Fresh Cherry Cobbler ~

1 3/4 Sugar
3 TBSP. Butter
1 C. All Purpose Flour (unbleached)
1/4 tsp. Salt
1 tsp. Baking Powder
1/2 Milk
1 TBSP. Cornstarch
1 C. Boiling Water
3 1/2 C. Fresh Cherries, Pitted

1) Mix 3/4 cup sugar, butter, flour, salt, baking powder, & milk together. Place cherries in the bottom of a 9"  square pan. Spread dough over cherries.
2) In a small bowl combine 1 cup sugar and the cornstarch. Stir in boiling water. Stir and pour over dough mixture.
3) Bake at 350 degrees for 45 minutes. Serve warm with whipped topping or vanilla ice cream.

I didn't quite have 3 and a 1/2 cups of cherries. I probably used 2 maybe 2 1/2 cups

I used this little tool from a manicure set to pit the cherries. I've never pitted cherries so I don't have a pitter. (I soaked the tool in alcohol before using for food)

Pretty good for my first time pitting cherries.

The dough layer ~ This is a delicious recipe. I'm going to use this for all cobbler recipes from now on.

The sugar and cornstarch layer. I ran out of white sugar and used sugar in the raw instead. It worked just fine!

I really liked this cobbler recipe a lot. I may add peaches with the cherries next time with a little vanilla and almond flavoring.

A quick update ~

We're doing well here. Olivia is doing great and taking to nursing very well now and she's sleeping through the nights much better. I still have several posts about the nursery to share with you. I will have them up soon!

Enjoy!
