Easter Display & A Cake Recipe


Hello, lovely friends.



Happy Easter one and all!

I didn't do a lot of decorating for Easter this year. I just did a few small things around our home to welcome Spring ~


 I put some forsythia in a tin door hanger for our front door. 


I hung up my Easter banner from last year.


I also re-used the Easter eggs that I bought last year. 


I put more of the eggs and some of my brown transferware tea cups in my glass cloche. Last year I placed bunnies in this cloche. You can see that post here.


I love my transferware!

As you can see I didn't do a lot as far as Easter decor is concerned. I've been too busy running from store to store buying up all the cute bunny items that I can for the nursery. That's a lot more fun anyway (smile)!

Cake Recipe ~

This is my Mother-in-law's wonderful cake recipe and we cannot get enough of it. I make it every year now!

Lemon Easter Cake


1 box white cake mix
4 egg whites
lemon pie filling
1 1/4 water
1/3 cup vegetable oil
1 container lemon frosting
1 container Cool Whip
jelly beans
coconut
green food coloring

1) Combine the white cake mix, egg whites, water, and oil. Stir for four to five minutes until the batter is light and fluffy. Pour into a greased 9X13 pan.

2) Drop Tablespoons of lemon pie filling into the batter.


3) Bake at 350 degrees for 35 to 40 minutes or until the cake separates from the sides of the pan. Let the cake cool completely.

4) Combine the lemon frosting and whip cream with a spatula. Do not use a mixer as the Cool Whip will separate. Frost the cake.

5) In a baggie, combine coconut and green food coloring. Sprinkle over the top of the frosting for your grass layer. 

6) Lastly, place jelly beans on the cake


This is one of the best non-made from scratch cakes that I have ever tasted. I hope you enjoy it as much as I do!

As much as I enjoy decorating my home and baking delicious sweets now, and as much as I enjoyed Easter dresses, Easter baskets full of candy, and my Mother's amazing Easter dinners as I child. The real reason for Easter is celebrating the resurrection of Jesus Christ!

Matthew 28: 1-10

1 In the end of the sabbath, as it began to dawn toward the first day of the week, came Mary Magdalene and the other Mary to see the sepulchre.
And, behold, there was a great earthquake: for the angel of the Lord descended from heaven, and came and rolled back the stone from the door, and sat upon it.
His countenance was like lightning, and his raiment white as snow:
And for fear of him the keepers did shake, and became as dead men.
And the angel answered and said unto the women, Fear not ye: for I know that ye seek Jesus, which was crucified.
He is not here: for he is risen, as he said. Come, see the place where the Lord lay.
And go quickly, and tell his disciples that he is risen from the dead; and, behold, he goeth before you into Galilee; there shall ye see him: lo, I have told you.
And they departed quickly from the sepulchre with fear and great joy; and did run to bring his disciples word.
And as they went to tell his disciples, behold, Jesus met them, saying, All hail. And they came and held him by the feet, and worshipped him.
10 Then said Jesus unto them, Be not afraid: go tell my brethren that they go into Galilee, and there shall they see me.

Jamie, your home looks lovely! I think my favorite decoration is your pretty teacups under the cloche. Thank you for sharing your lemon cake recipe. Lemon is a huge fave around here, and I'll be making your cake for Easter. Happy Easter!
